Three nights in galway should be easy to fill. Obviously Nightlife in galway there is a great choice of food and bars so thats easy.

A drive out to Salthill is a great start. I love to walk the prom from start to finish and its a great free activity. You could also take a day trip drive out through Connemara over to clifden in litttle over an hour and spend a 1/2 day there. closer to galway along the sea you can head out towards Spiddal etc.
in around the city itself you have nice areas around the claddagh and spanish arch not to mention just wandering through all the streets.

Check out the Town hall Theatre for any shows that might be on if thats your scene.

Halloween Fancy Dress Party Trail is on on Thursday:

Galway is great to just walk in and enjoy the atmosphere. There's a small museum by the Spanish arch (http://www.galwaycitymuseum.ie/), you can see the old city wall down the lane off Quay St, just around the corner from the Quays Bar, Lynch's Castle (now an AIB branch on Shop St) for touristy photos. Walk down to the Spanish Arch and then down to the Claddagh to see the swans.
The walk up from Wolftone Bridge along the canal, between it and the river, is lovely. It's got a lovely view of the Bridge Mills at the first bridge, and then as you keep walking you end up the back of Born (clothing store) and a nice view of the Cathedral.

Connemara is beautiful. If you have nice weather you could go to Connemara National Park and walk up to Diamond Hill, and see the visitor centre there. Kylemore Abbey is also worth a visit.
