Audi A3 thermostat issue

ESP light comes on after a few mins from a cold start with temp gauge needle failing to move. 2 ignition cycles (turning engine off and on twice) sorts this and the light disappears and temp gauge reads 90. Google tells me it's most likely the thermostat stuck 'open'. Anyone shed a little light please?

Sounds more like a coolant temp sensor problem. A diagnostic scan should confirm.
