    thanks for the replies

    ended up doing roasted peppers, stuffed with almonds, manchego cheese and breadcrumbs, drizzeled with olive oil.

    tried to make homemade aioli, but it wasnt very successfull (a bit bland and thick)...anyone got good receipe?

    This is how I make aioli, and no complaints so far:)

    200ml mayonnaise (make your own if you wish or a good quality supermarket one is fine)
    3 large garlic cloves, peeled and finely chopped
    1 tbsp of lemon juice
    5 tbsp of extra virgin olive oil
    Salt and pepper



    1. Place the mayonnaise and garlic in a bowl.
    2. Whisk together and then whisk in the olive oil a little at a time.
    3. Whisk in the lemon juice and season with salt and pepper.
    4. You can thin the Aioli if you wish, by whisking in a little boiling water.
