Coconut Milk

    Hey all,

    Just wondering what to do with left over coconut milk, just used some in a recipe and was wondering if it could be watered down and drank? or whats the best way to store it.

    Its really thick stuff, like 65% coconut extract...

    Make a rice pudding with it, use it in a smoothie, Use it in a curry.
    Thats what I'd be looking to do.

    Substitute it for milk in your tea, coffee, cereal or anything else you use milk for.

    I have used it instead of oil to roast vegetables and they came out well.

    I normally have a bit left over after making Thai curry for two, so I have a coconut and whey protein shake the next morning.

    Sounds like a good idea, but its so thick might have to start with a small amount to begin with

    Is it coconut cream or milk?
    I normally add what ever number of calories and protein I'm looking for and add water if it needs liquid.

    If you're cooking rice you can swap out half the water for coconut milk. It's super delicious with hot curries.
