    1 x 1.8kg coopers Irish
    2x 500g dark DME
    85g Roasted Malt
    280g Pale Chocolate Malt
    100g Cara malt
    400g Dextrose

    300g Lactose in Boil

    hops

    20g Fuggles
    20g willamette


    Safale 04

    3 Vanilla Beans sliced open & soaked in jar with spiced rum for 2 weeks added to secondary after 10 days

    Cocao nibs(in secondary)

    O.G. 1056

    made to 23 ltr

    This sounds great, did you boil everything bar the kit for 60mins? How much rum did you soak the vanilla in?

    Yeah , all grain at 65c simmer for 30 mins ,then remove muslin bag of grains ,then boil for 20 more add hops etc , about 80-90ml for a week or so.

    Did you add the rum to the brew also, or just the soaked vanilla pod?

    Yeah the whole lot ,you could use any spirit ,bourbon works well ,or for neutral taste vodka

    Sounds interesting alright, I done one recently with cocoa nibs x100g bought in health shop, it has mellowed a lot since Xmas, I feel head retention suffers a bit with additional ingredients
