Iv never herd of anyone doing it before , so just thought i'd ask incase they would cause problems in the long run like not bonding with the cement as the surface is different on the paving brick.

on the pillar pier thing, type brick pier into professor google images and you come back with something like im doing.

The usual way to build a pillar is 4 inch solids layed on their flats and then the next coarse laid like normal up on their sides.

This gives the pillar strangth and for also taking the weight of gates or fences being drilled into them.

I wouldnt use normal pavers,as they are not designed for pillars and being built up ontop of each other.

The use of the term pier for what you're doing is fine.

I would think pavers would be fine. Pavers would generally be stronger than typical building bricks. Not sure how they'd look though. Also pavers would generally be denser than standard brick, therefore have less soakage, therefore the mortar would take longer to dry, but this isn't really a problem unless you were building them very high in windy weather
