I saw a T Shirt in shop in Temple Bar with this written on it.

Is there any truth in it? I've googled and not found any instances of seaweed making anything - except a big sticky/stinky mess

Sounds like something right out of SpongeBob

It's from The Field, Bull McCabe tells his son Ned Stark as they use seaweed to fertilise the land.

on the aran islands, and plenty of other places around the coast of ireland, they used to take seaweed from the beach and use it make fields out of the bare limestone bedrock

*Gone*, because I drove em out: me and my kind. Gone, but not forgotten Flanagan. No outsider will bid for my field.

You want to learn how to use google better so. Use "quotes" to find an exact phrase.

    "seaweed made that field"

    Oh no.

The Bull was far from innocent.

It was his field. It was his child. He nursed it. He nourished it. He saw to its every want. He dug the rocks out of it with his bare hands and he made a living thing of it!

Did you google seaweed or the phrase at all?

Sea weed is used for lashings of stuff as well as fertilising fields.

Tadgh McCabe: What age was I when Seami died?
    "Bull" McCabe: That's a queer question. I... I don't know.
Tadgh McCabe: What age was Seami?
"Bull" McCabe: Thirteen years, six months, twenty-four days.

Nothing beats drinking hot tae out of a bottle after cutting turf all morning with a slan.

It's just begging for a remake "in da hood", where The Field is a trendy nightclub and the Bull a drug-dealer and pimp gone legit trying to build up his business, while the Yank wants to demolish the club and built a carpark

"Bull" McCabe: There's another law stronger than the common law.
    Father Doran: What's that?
"Bull" McCabe: The law of the land.

Seaweed is great in vegetable gardens too. And like someone said, places like Aran they'll mix it with sand and gradually "make land". It goes into all sorts of things now from ice cream to fertilizer to animal feeds.
