What would be the "approximate" cost for sinking a well and installing a pump etc. ? Just a rough idea.

How long is a piece of string. It really depends on how deep the well drilling is. I've seen wells go from 100ft to 500ft

Thanks for responding DTP. So how much would a 300 ft. well cost?

I haven't a clue. I just know they price it by depth

    €4000 onwards.
    Drill and submersible pump.

And read the smallprint in the agreement, you're paying for the drilling, if they hit no water you still pay !! If they have to drill a second borehole, you pay for both.

When water chares were mentioned a few years ago, it was said it's everybodies water, so you use you pay. (The Greens).

No chance of not finding Water in Ireland. The only question is at what depth.
Choose where you would like to locate the Well and just go for it. Make sure you leave a bit of room just in case the pump has to be taken up for repair.

Make sure and use a liner always at least for the first 40 Feet.
Depending on Soil structure some Wells need liners all the way to the bottom. Make sure you choose the pump and go for a good brand like Grundfos.
