There was a very good series on TV3 for the 125th anniversary in 2009 that was subsequently released on DVD
I have it at home but cannot remember the name of it
Might be a starting point for you

    Edit
This is it by the way

RTE brought out a video of All-IRELAND finals a few years ago but it flew off the shelves and to my annoyance it was gone before I knew it. It had black and white stuff back to the 40s. I've been searching for it without success. Anybody know anything about it?

I rented something similar as an old VHS tape way back in the 90s; classic stuff, wish I could get my hands on it again also :(

I don't understand why they don't do a reissue of these things.

It maybe the archive footage released by the Irish Film Institute.

Available as a 2 DVD box set here on their website, but you can also purchase the hurling or football DVDs individually.
