    As a proof of concept, would it be possible to turn a Samsung Galaxy into a v.low spec server?

    Yes. Ubuntu for android should achieve this. You could do it yourself, but I'd say it'd be a fair bit of heartache.

    Probably want more control over things running but a simple way would be installing this.

    Trying to use see if a smart phone can be used as a low power, single function server. Don't want/need to keep Android on it at all TBH, just wondering if I can change OS (even though android is Unix based)

    There are early versions available alright. Full phone functionality is a no-no, but it doesn't sound like s/he cares about that.

    he and nope.
    Looking to do a cloud based project and having Ubuntu on phone would be a great asset for it
