What happens if a name driver crashes your car, is your NCB gone? What if named driver had their own NCB and then became just a named driver, do they still accumulate their own NCB or lose it?

Yes the policy holder loses their NCB if a named driver crashes. The named driver won't lose their NCB, but will have to declare the incident and may be loaded for it.

    Exactly.
My wife (who is named driver on my policy) crashed my car. My NCB was affected (or at least it would be if I hadn't NCB protection).
She has her own policy on different car with her own NCB. Her NCB was not affected. She informed her insurer that she had an accident, and her premium was loaded for next year, but this was really tiny difference (something below 10 euros more).

Thanks. The OH just passed his test and thinks we should downgrade to one car, we don't really need two, but I presume with 4 years licence and NCB it'd make more sense for me to be main policy holder. I just think it'd be miserable if he crashed and I lost my NCB and he didn't!!! Is there any sort of joint policy situation?

If you think he's more likely to crash then let him cover the car. That way if he does have an accident then your history is unaffected.

Just bear in mind that a NCB only lasts for two years after the policy expires, so you will need to insure yourself on something at some point to keep it alive.
