RAM upgrade for MacBook Pro

Im looking to upgrade the RAM on my MacBook Pro. According to the apple website the max I can put in it is 8GB but I have seen on other forums and sites where people have said this is just Apple being cautious and that you can actually put in more. Is this true and if so would it be possible for me to put in 2x8GB instead of 2x4GB sticks?

Yeah, I was just about to link that! All of the ones that Apple recommend for 8 there can actually take 16 so you should be sorted.

Mine was only supposed to take 4gb max but I put 8 in and it works fine, its more than I need even when multitasking

MacBook's can indeed take 2x8Gb RAM. There are plenty of YouTube tutorials explaining the replacement procedure and demonstrating the improvements in benchmarks.
