    Hi,
    Oman is a beautiful,safe country.
During the x-mas is perhaps the best time to go (weather conditions).Muscat may be your port of entry, one day wandering around could be worth enjoying, going to Sur(old town),seeing turtle natural park area,Sharquia desert(serious 4&4 driving with overnight stay in beduin camp, visiting Nizwa&Green mountains...
Depending on what do you want to see&do i can give you some tips.

Thanks for your help - would it be a very expensive place to go, or are there more affordable option there for staying/eating?

your main expense is the air ticket, the cheapest off-season fare is about 500 euro return, the x-mas is high season so the prices are much much higher.Car rental starts with 35 euro(200 km,over charged extra) and accommodation in a budget hotel about 40 per room.the food is not that expensive provided you stick into local coffee shops, hotel restaurants serving alcohol are expensive.
The entrance fees are very cheap,(forts=1 euro, turtles reserve park=4 euro).
Do you have any particular idea what do you want to see/do?Send a message if you need a help.
