Ok, hopefully someone can offer some advice on this subject. In practical terms, if an Irish guy and girl from Brazil (here on student visa) get engaged in Ireland, what needs to be done so that things go smoothly before and after marriage?

This thread has all the info you need. You would be initially applying for a defacto visa and then after marriage a spousal visa.

Hi there. Thanks for the info. I have read through that thread and also other info online. Would you know if the two year requirement for de facto status is set in stone as it would appear that the only other option is to get married and then apply for normal spousal visa?

pretty much you have to have 2 years of a relationship, and getting married first won't necessarily solve that because even then you have to prove the validity of the relationship. Applying after marriage can take 6-9 months for the visa and the visa will only be given for 1 year initially.

    How long are you together?

De facto relationship is a real thing. The embassy was pretending like they've never heard it. All u need is to collect everything u can to show that ur relations are real. We had to bring around 1200 pages to the embassy.
