I've moved away from home and want to know if I can walk in off the street to any GP and just start going to them or do you have to switch from your old one? I have VHI, if that makes any difference?

I've never had a problem doing it. They'll probably ring you old doctor for your past records. VHI shouldn't be a problem but maybe a quick call to confirm it might not be a bad idea.

Switching GP is only awkward when you're on a medical card. Otherwise it's just a case of ringing up, asking if they're accepting new patients, giving them the information they need if they are and going in for your first appointment.
