I'll be landing in cork airport thursday night and reckon it will be midnight by the time Im out. Wondering will there be anywhere near by heading in the waterford direction open to get some take away before the spin home?

You're probably best to come off the dual carriageway at Douglas and go to KC's chipper on the Main Street. It closes at 12.30am or else the nearby 24-hour McDonalds. You have to drive on to Rochestown to get back onto the dual carriageway again to head through the Jack Lynch Tunnel.
