Am headint in July to Asia where I'll end up doing a CELTA at some stage in Chiang Mai(got accepted into the course already).

What I would like to know is how do I go about bringing a copy of my degree over with me for potential interviews etc.

I remember hearing some words used to describe what needs to be done with your degree over here but can't remember the phrase used.

    Any help on this matter?

    Thanks in advance.

I'm not really sure what you're asking? If you want to get a copy of your degree photocopy the original or order a new one from your University. You can get the photocopy notarised from a solicitor (look up 'Notary Public' in your local area,) then you send off the notarised photocopy to the Dept of foreign affairs to get the Apostille.

To get your degree translated from Latin into English you need to talk to your college. If you went to a NUI then go to their site and navigate to the documents section.

After that you need to get any official documents you plan on bringing apostled with the dept. of foreign affairs as linked above. This includes garda background check, degree parchment, degree transcripts etc
