2013 Cooking Club Week 13: Tarragon Chicken with Tangy Apricot Sauce

    So first of all ye will need the ingredient list. I was cooking for two folks, so adjust as necessary:

    * 2 Chicken Fillets (I used skinless but you can use ones with the skin on, just put skin side down FIRST!)
    * 2 Tablespoons of Dijon Mustard (less or more to your preference. I found 2tbsps to be slightly too much personally)
    * 1 Tablespoon of Vegetable Oil
    * 2 Ounces of Ready-to eat Dried Apricots, sliced
    * Few Fresh Sprigs of Tarragon (I HATE the taste so I used a sprinkle of dried Tarragon :D)
    * 1 Orange, juice only
    * 2 Tablespoons of Pine Nuts

    Onwards to the method :)

    STEP 1:

    Pre-heat your skillet
    Spread half the mustard on one side of the chicken. Turn them and spread the remaining mustard on the other side.
    Put the oil in the skillet and place the chicken in (skin side down if using chicken with the skin on.
    Cook for approx 5 minutes on this side (will obviously depend on the size of the chicken).

    STEP 2:

    Turn the chicken breasts over and cook for approx 5 minutes on the second side.

    STEP 3:

    Sprinkle with the apricots and tarragon.
    Pour over the orange juice and cook for a further 5 minutes or until the chicken is cooked through.

    STEP 4:

    Sprinkle the pine nuts over the chicken and cook for about 30 seconds to warm through.
    Serve the chicken with the apricots, pine nuts and any sauce spooned over.

    I served it with some rice and peppers.

    The first time I made it I found using whole tarragon a bit much so I thought using chopped would help. Basically.

    Had it for dinner, it was so tasty :D Quick and simple too. I love a recipe with minimal wash up!
