Questions for Media server setup

    HI I'm new to boards and new to HTPC/Media Centers but 20 years (or so) in IT but I'm considering putting together a media server and would appreciate any advice the community could offer.

    My requirements:

    I want to be able to record and watch live TV (we currently have Sky)
    I have a collection of movie files I would like to be able to watch on any TV in the house (with the option to add more easily)
    We have an Xbox which I'd like to be able to stream TV/Movies/Music too

    My hardware/software

    Dell T105 AMD Opteron 2.2GHz server (single proc, 8 GB ram, 2.5Tb disk space (SATA)
    VMWare 5.0
    Ubuntu/Mythbuntu for servers.

    My thoughts.

    I'm thinking of 3 VMS on my machine
    1 for firewall/end point security.
    1 for mail server and proxy server (also my sons Minecraft server is here)
    1 running mythbuntu with Analogue connection to 2 x Sky boxes (if I understand this should give us the same functionality as a Sky + box - ie record one channel while watching another or record two channels and watch saved content?)

    on each of the TV's again Mythbuntu front end so that live TV/recorded TV/MP4 files/audo files/pictures can be streamed from the backend.

    I know I can do the firewall/mail server my questions is more around the mythbuntu setup and also opinions on the amount of load I'm putting on one server.

    My better half is not technical but doesn't mind what I do as long as she can still do with the new solution what she currently does with the SKY+ bow we currently have, so some comments on end user experience would be really appreciated.
