Add salt & pepper and fry them with onions. Serve along with lashings of mashed spud. Yummy!

    Orange glazed pork fillet.

    you need a whole fillet
about a half litre of orange juice (and a little more for sipping/backup)
thai fish sauce, just a few drops
    clove of garlic minced
    small piece of gigner minced
    a chilli minced
    soy sauce, a dash
    desertspoon of soft brown sugar.

Pour the juice, thai fish sauce, soy souce sugar, garlic, chilli and ginger into a fryingpan wide enough to fit the fillet in and bring it to a boil, then turn down to medium and allow it to simmer for about 2 minutes to dissolve the sugar and cook the garlic and stuff.

After than gently place your pork into the pan and just leave it alone for about 5 minutes then turn it and leave it for another 5 minutes. Then turn it again for 5 minutes but this time you want to constantly baste it with the liquid in the pan while it cooks, turn, another 5 minutes and more basting.

If the liquid is getting too think and reducing down too quickly just add some of the OJ you're sipping or a splash of water to the pan.

The first 10 minutes (5 mins each side) gives it a nice colour and a sort of caramalised crust and the next 10 minutes of basting keeps it moist and allows the liquid to make a really sticky glaze.

I serve it with brown rice, sugarsnap's and a slaw.
