Can you recommend a docking station for a laptop hard drive please. Something that is easy to use. Do I need to get a cover for the laptop hard drive. The information on the hard drive is stored on a a windows 7 hard drive but will be transferring over to a windows 8 computer. Does this make any difference?

You need a SATA to USB connection. You don't need the case, just the cable interface.

In fact, if you have a desktop computer you can use the connections inside the computer to hook up the drive.

Yes you should have no problem with connecting it to a Windows 8 machine.

i want to take the information from another laptop disc drive and transfer it over like drag and drop. Can I do this? Would a docking station be handier to use?

yes they can be handy . I've had one of these for the last year or so and I'm very happy with it http://www.amazon.co.uk/gp/aw/d/B00327HTD4/ref=mp_s_a_1?qid=1363733378&sr=8-6&pi=SL75

you can get one which is Sata only or another which is Sata/Ide. check the reviews yourself

You really don't need a docking station. It would not be any handier to use. Like Alanstrainor said, you only need a converter on its own or just an enclosure less than €3 shipped...
