We are looking at implementing a web server inhouse to share company documents on the network.

What are the benefits and drawbacks to using both Windows and Linux as a hosting platform?

That's a very broad question and depends on a lot of factors.

I would start doing some initial research online and then return if you have more specific questions.

If what you're looking at is a webDAV server with a collective shared folder Apache is a very easy to implement, minimal skill requirement solution.

On the other hand if you have an IT department with an MS bias and you need to offer a share-point type solution. share point is probably the way to go, on the other, hand, if you have no prejudice for MS a share-point equivalent isn't that hard to create for a technically competent audience and there are a number of free solutions available though without the exchange plug-ins.

Really it depends on the internal IT skillset and that of the the expected users, so time to share, we use subversion and Apache to maintain our process and specification docs and our code moved from svn to git last year but we're quite a technical shop.

OP, check ownCloud, gitolite and alfresco community.

+1 for Alfresco community, works very well for us. Sharepoint is horrible IMHO, not very intuitive. Alfresco is much better for us. YMMV of course.
