ThinkBike in Rathmines, bought my road bike there this time last year and was a member of their road club for 2012 too...top men!

Cycleways on Parnell Street, got my first road bike there last July. Have found them really helpful in the whole repair end of things, and I've pretty much been using them since given I've had some bad experiences with some of the bike shops in my area (won't name and shame) for repairs/gear, etc...

Fitzcycles in Stillorgan. They're the nicest guys i've ever dealt with.

Use both Staggs in Lucan and Base2Race in Ballymount. Very happy with both of them.

My shop is the best (I should point out that I have no connection with it whatsoever).
