Sponge cake fillings

Want to bake up a few simple sponge cakes, vanilla and chocolate ones. I can't put cream or anything that will spoil in them (for a bake sale) so has anyone any suggestions aside from jam and buttercreams. Anyother flavours that go well..even any other jam flavours?
