I've ordered a phone online, paid in advance. Just before dispatch I was told, they don't have the black one send white instead. I'm not happy with the process now (and wasn't either before), credit is gone from my a/c. Shop is outside of EU. I've applied for a refund. Should I let my bank know as well? Will I get the conversion charges by my bank as well? Thank you!

You don't need to let them know about an incoming refund, no.

The refund would be credited back using whatever rate prevails on the day. Thay may work to your advantage/disadvantage slightly depending. The conversion would be included. The foreign transaction fee (if you were charged one) may not be: you would be best advised to check with them directly as to what their policy is on that.
