Where to get offal (beef tongue and gallbladder gland for now) in Dublin or around?
in city centre I can get beef tongue but the price has gone up sharply steadily

I could buy by the box or bag, not just retail

had a butcher that could get me loads of gallbladder gland for a fiver but he's gone out of business now, other butchers I know aren't interested on passing the word to their suppliers of the care of cold chain they need (they go off immediately unless cold)

its a product that has really shot up in value in recent years, huge amount from the slaughter house I use goes to Poland, nearly all the 5th quarter is now being used. For instance hoof which were being dumped last year are now being used and having value added which is good news. To get offal nowadays is next to impossible from slaughter house due to rules and regulation. A manager told me he cant even get some himself for a few dogs. Surely a big butcher shop should be able to source it but it will come at a price as who else would want it ordered in

I am led to believe that the fifth quarter is able to pay the wages of all the staff in a meat factory.

Farmer recieves no payment for this.

up until very recently this was a major cost of disposal for the meat factories. because they have went and found new markets for this is commendable but if we could get a buck for thanks it would be nice aswell. they probably say they are paying just an enough to begin with. Even the hot weight reduction, I would question the % they knock off

That's just plain ridiculous. They'd nearly want to talk to ya for that price. You'd have more value out of a steak or some nice stewing steak at least my dear man

Kepak in clonee have a wholesale shop. Call into them I'd say they could sort you out with a couple of hundred tongue's a week.
