For some pure cheddar cheese, check out Steven Segal's stuff, i.e. Under Siege (and the sequel!). Cheesy but very entertaining. There was a glut of these Die Hard inspired action movies throughout the '90's that you just don't see anymore, e.g. off the top of my head:
