Marmalade boil temperature to get an OK set

    With Aldi offering Grapefruit at deep discount, an excess of Lemons & a few Oranges on hand I just had to make some 3 fruit marmalade.

    First batch boiled to 219F and is clearly over boiled ( and very, very set ).

    I've another batch ready for sugar and final boil. What temp does the team think I should boil this batch to to get a set but non toffee product ?

    Inputs :

    - 3 pounds fruit , coarse cut, simmered 3 hours with
    - 1.25 ltr water ( yup, thats all the water that was added )
    - 1.8 kg sugar
