Preparing Snipe

    How do you guys like to prepare and eat snipe? I shot my first one this morning, pan-fried the breasts with onions, mushrooms and chopped bacon and had it on toast, was excellent, but curious how the rest of you do it.

    Dev is the man to ask ! He got a great recipe for snipe mince meat !

    I'm no wizard with a shotgun, doubt I'll be able to shoot enough of them to make any decent mince! :D

    Had a good laugh at that :D

    Here is the recipe:
    • Load shotgun with 34g 7
    • Search for snipe
    • When snipe gets up take aim and pull trigger
    • Then send dog to find all the bits left
    • Put in bag
    • Bring home and stick on pan
    • Enjoy!

    I just plucked down to the breast and took them out with a boning knife. Is there a better way to get more meat out of them or any better way to cook them in your opinion? Have to say, pan-fried with bacon, onions and mushrooms it was delicious, and it's a really interesting flavour.

    Olden days say 4-8 days hanging....... but not done today. If you want the trouble, pluck it, DO NOT draw it then truss with own beak and rub with oil or butter and roast in a very hot oven until under done. Serve on toast with balsamic dressing. You CAN eat the entrails if you wish.

    Breast the bird(no need to hang), wrap breasts in streaky bacon fry until bacon is kinda crispy, serve on a slice of brie on toasted ciabatta, delish..snipe is a lovely meat and this is the nicest way to enjoy it imo. Otherwise stew or soup are a good if you've enough of them and want to try.

    Have been trying to shoot snipe for the last two years and to be honest there b####ing hard to get now in the two years I have been trying to get them i only went out twice once last year and once so far this year but with the Pheasents been scarce I think this might be a great way of keeping the eye in anyway I did get one off a mate last year and they are only lovely so shoot away lads and lassies but as someone said last season there MINI JET FIGHTERS so best of luck;)

    Dalken, that sounds fantastic. Definitely going to give that a go if I get any more.

    Tawny Owl, total fluke to be honest. I am by no means a good shot with a shotgun, but I got lucky. First snipe I ever fire a shot at and killed it with the first barrel. :D

    I just pluck them like a pheasant! Stick them in the oven for half an hour, really tender meat, lovely bird to eat!!

    I pluck them and stick them in the oven when roasting a duck for the last 30 mins, fried/roasted in duck fat.

    They are hard to shoot but imo they are the finest of our game birds, wild, abundant, challenging and tasty.. yum yum.
    To shoot snipe I think the trick is to be just as instinctive as possible, dont let them out (turn), practice a quick and assured mount and bang as soon as he's in the frame, never chase a snipe with the barrel, they are impossible to lead, ur just wasting shells.
