I am trying to remove the callipers and I have taken out the bolt that goes through the frame/fork, should they come off or is there something else holding them on? They are shimano 105

Probably just stuck with dirt. Give them a small tug.

http://www.youtube.com/watch?v=m9rqP2IyXEI ...the bolt you removed is actually a long nut as per the video so you need to wiggle the brake caliper from side to side whilst pulling the caliper bolt from the fork/frame

Thanks lads, got them off in the end. took about 10 minutes of pulling and dragging to get them off. I was convinced I was going to break something.
