I have 2005 deore lx rear hub (not original equipment on the bike)which tech doc from Shimano says takes an 8 or 9 speed cassette. As the bike is circa 1992 I want to fit a 7 speed cassette on it to work with deore xt 2 thumb shifters. Will the 7 speed work fit ok with a spacer or two? Any advice appreciated.

i'm running 7 speed with 7 speed sora shifter on a tiagra hub (was 2008 just replaced with a 2012)
i'm guessing the first was 8 speed and whats taigra now 10 speed ?

using this on both no prob

I've put an 8 speed cassette on a deore lx hub which originally had a 7 speed cassette. Just make sure its a 7 speed cassette and not a 7 speed freewheel cluster (screw on).

You'll fit the 8spd cassette on 7 spd freehub body with one spacer(2,5mm tick), the derailleur will shift 7spd if You have 7spd shifter,

Did this myself and it worked a treat

    It will work fine.
It is always worth keeping a plastic spacer when you change a cassette, you never know when you might need one.

I built a bike a while ago. The intention was to shift Shimano 9 with Campag 10. (Google Shimergo for details.)
Anyway my 9 wheel wasn't built and I was too impatient to wait. I had a 7 hub on a spare wheel so I fitted 8 of the 9 sprockets (with the 9 speed spacers) on the 7 hub. It worked fine.
There is a good bit more flexibility out there than the manufacturers let on.
