If my employer chose to let me go because I was certified off sick from work too much would I still be entitled to get my redundancy payments or is it dependent on company policy?

Thats not redundancy....redundancy is when your position is no longer viable

You are getting let go due to too many sick days, your job will be filled by someone else therefore its still a viable position

In blunt terms your getting sacked not being made redundant

If your employer will give you a letter stating this you may be able to sign on and receive money immediately
