    Hi folks:

    Let's be having your recipes with ingredients for Hallowe'en grub, eg, pumpkins, nuts, crab apples, etc...

    Colcannon!

    Boil up some finely chopped Kale, stir into mashed potatoes, add some Euro coins wrapped in greaseproof paper as a "surprise".

    We sometimes add mashed carrots, and maybe mashed sweet potato also. Some people use mashed turnip too. Pretty much any mashable veg really.

    toffee Apples made these this morning :D

    For the toffee coating
    225g demerara sugar
    25g Butter
    2 tbsp golden syrup
    110ml water
    0.5 tsp vinegar

    I cover apples in boiling water for 1 min to get the wax off,

    6 large or 9 small dessert apples
    6/9 wooden skewers, for holding the apples
    Dissolve the sugar in the water over a moderate heat. When it has dissolved, stir in the vinegar, syrup and butter. Bring to a boil and cook without stirring until it reaches hard-crack stage (138C) or hardens into a ball when dropped in a jug of cold water. This should take around 10 minutes boiling time.
    While the syrup is cooking, pierce each apple with a wooden stick. Once the toffee is ready, dip each apple into the hot toffee, turning it around in the syrup so that each one is fully coated.
    Leave to harden on a lightly oiled tray before serving.

    Ingredients
    Medium pumpkin de-skinned & chopped in 2cm cubes
    1 medium onion finely chopped
    2 cloves garlic minced
    2 cm ginger grated
    1 tps ground cumin
    2 tsp ground coriander
    1 tsp ground chilli
    sprinkle of salt
    600ml vegetable stock
    1 can coconut milk
    juice 1 lime
    vegetable oil

    Method
    Sprinkle the spice mix & salt over the chopped pumpkin & drizzle with a little vegetable oil
    Roast at 160C for 30-40 mins until tender
    Meanwhile, in a pan sweat the onion garlic & ginger until soft, but not coloured
    Add the stock & bring to the boil, then simmer for 10 mins
    When the pumpkin is done, put in a blender with the coconut milk & blitz until smooth
    Add pumpkin mix to the stock & then squeeze in the lime juice
    Simmer for a further 5 mins

    Serve with a sprinkle of fresh coriander & some freshly grated coconut - maybe some finely chopped chilli if you want an extra 'kick'

    Green Ghoul Punch

    2 tubes red gel cake decorator icing
    Lemonade mix to make 2 quarts/liters
    1/4 cup sugar
    1 teaspoon dry merigue powder
    2 liters seltzer
    green and yellow liquid food coloring

    !. Squeeze drips of icing gel on rim of punch bowl and punch glasses to resemble dripping blood.
    Let dry 10 minutes.
    2. Mix lemonade mix sugar and meringue powder ( this makes a nice thick froth) in a bowl. Slowly pour in seltzer, whisking continually until fully blended and frothy on top. Gently stir in 10 drops of green food coloring and 4 drops of yellow. Pour into punch bowl . Clear punch bowl and cups are best.
