Hi guys, I need the lowdown on Manuka Honey please.

I just recently started on a primal/paleo diet. I just learned that normal honey is heatedtreated to become what it is or such and that raw honey is preferable on this diet. So some questions I have are:

•Is manuka honey a raw honey?
•whats the difference between 10 manuka versus 15 manuka etc?
•Is the cheap 10 manuka version in Lidl for €4.49 any use?
•My mam has a posh looking version(probably from a health store)that says UMF 15+ manuka...what does UMF stand for?
•I see a version in Tesco with the numbers 100+ and 300+ and 400+....whats this?
