Confit of pork belly

    Never tried cooking pork belly confit but going to give it a go this weekend :D

    Any tips or advise from any of you good folk here that you can pass on to me from you experience's of cooking this?

    its not something that you can just rustle up. a good pork belly confit takes days rather then hours. first you have to soak it overnight in a flavored brine, then you slow cook it for a few hours in fat, then cool it and press it under some weight, then portion it and pan fry till crispy, then start licking your lips and enjoy. well worth the effort.

    Any Asian/spice/deli shop - probably in any supermarket too.

    Sharwoods do star anise, My local tesco and SQ both stock it
