Is Nui Galway dominated from those from the West of the country or is a very mixed in its demographics?

I dunno if its just me but I find NUIG is heavily populated with people from Donegal and Clare in particular and obviously Galway. Mayo, Roscommon and Sligo are also in numbers around the place. Ive met very very few from the east. In fact, I can't remember speaking to one Dub. Saying this, ive only been in Galway for a yr.

Mainly folks from Galway and Mayo, and to a lesser extent Roscommon and Sligo as Nal said. There is a relatively good amount of folks who come down from Donegal as well, Donegal's population is relatively big and from the ones I know the college goers are pretty much split in half, one half going to Dublin and the other to Galway. I know one fella from Dublin in my course but that's about it (he also claims to be from Kildare and Maine, USA), there used to be a girl who came from Dundalk just down the road from me so that's the opposite coast pretty much. Another guy from Antrim too, one from Longford and then there is me, from Cavan (Monaghan side). There comes about a busload from Cavan and Monaghan every week, with what I imagine to be another bus load staying down over the weekend... That from my own experience anyway.

Not as far as I've seen. I have met a few, but as others have said it is mostly people from the west-ish half of the country.

I know a couple of people from Cork and Wexford. Majority are from Connacht and Donegal though. The Feda bus could be partly responsible for that seeing as they go direct from Letterkenny to Galway often enough, and much faster than Bus Eireann. Border counties would also account for a decent percentage.
Dubs aren't that common but they do exist. IME, they're not going to travel farther from home when there's already a couple of college close by.

There aren't many from Dublin, kind of depends on the course though, the likes of science or arts there would be very few as you pretty much have 3 colleges in Dublin to chose from to do these courses! Some courses that you can only do in NUIG or have lower points like Biomedical science, speech and language etc.. tend to have more people from the East Coast!

It's funny, people are always surprised when you say you're a Dub, and vaguely suspicious in a "why did you come here exactly if you live in Dublin" way :P :)

Even though you might not know it, that is probably a good thing.

It more than likely is, I need to get away from here anyway.
