Which way to apply for CAO vacant places?

Im thirty years of age and intend to apply for a vacant CAO course as they become available. My question is whether I am better off applying as a mature student or with my leaving cert grades from 2000. Am I required to apply as a mature student as I am over 23? Thanking you in advance!!;)
