I will be going back to work soon on a annual wage of 31k.
I am married, and I will have tax credits for an incapacitated child of €3300 ontop of the other tax credits.
How much should I expect to take home each week after everything is deducted?

There's plenty of online calculators available. Most of them aren't 100% right but they'll give you a rough idea of what to expect.

Google something like online Irish gross to net calculator. It'll give you a rough idea.

You don't say whether you will be in the private sector or public sector , or if your spouse is working or at home .

Anyway , important thing is to apply for your tax credits to be sent to your new employer immediately you start working .

Your circumstances for the first 8 months this year will dictate your entitlements / take-home pay
