Currently have a 2009 20" iMac with a 2.66 GHz Intel Core 2 Duo and 2GB of ram. Upgraded to Snow Leopard a couple of weeks ago without a hitch, should I upgrade or would the computer not be able to handle it?

It'll handle it fine. Just bump the RAM to 4GB first.

I don't see why you'd upgrade. The feature list is different if your Mac is pre 2011 it seems you don't get the most appealing feature of the mirroring.
