Nice towns/hotels in Ireland

Sorry if this is wrong place to put this couldn't find an Irish travel thread. I got birthday pressie from hubby to pick a nice hotel in Ireland for a w/end away. To be honest I dont travel a lot round Ireland as I go abroad more for holidays. Would like to go to a really nice hotel/castle and maybe if there is a nice town nearby. Maybe not in the west as from there and have being to every place nearly in the west. Kerry would be lovely but it's a little far as hubby is a nervous driver somewhere that 1/1.5 hr max outside Dublin for about 2/3 days. Been to Kilkenny, Waterford and Wexford before. Any advice appreciated.

I'll be a bit biased and recommend Killaloe in Clare. 2hrs 15min from Dublin on the motorway.

The village is pretty and there is a lovely beach for walks, a craft shop/pottery,good pubs and so on.
