We seem to be able to get lovely Pink Lady apples lately. They're crunchy and juicy with a great taste to them. I'm wondering how good or bad they'd be for making up a brew, anyone try them?

I don't know but if I will have a look. How many trees have you?

I haven't tried them, but I would suggest that you'll probably get a bit more "bite" if you add in a few cooking apples too. The pink ladies on their own might leave it tasting a bit flat. A book I read on cider making suggested adding cookers if you're using "eaters" instead of pure cider apples.

Total wrong idea, pink lady are specifically bred for eating. Not exactly a cheap variety to use either. There are specific cider making apple varieties that give that acid bite that makes cider refreshing.
