Renovation of stone shed

Need a few pointers. Will be soon renovating a stone built shed for use as home office and occassional living accommodation.
The walls are built from rubble limestone with dressed quoins and brick around window and door reveals.
I will be fitting new windows and door but want to retain the external stonework, it is in good condition with no damp showing internally.
What are my options when it comes to insulating the inside of the external walls?
I will be laying floor insulation and a new concrete floor. A new roof has been added.
    Unsure about internal insulation detail.
    Thanks.
