Booking flights without passport

Am I correct in thinking that most airlines don't ask you for passport info at the time of booking? What about nationality info?

I am planning to book long haul flights in the next week or so but my Irish passport won't materialise for quite a while. I want to use my Irish passport to enter this country. Is it likely to be OK to book without the passport no? If my Irish passport was greatly delayed in arriving, I'd have to go on my British passport - if I state my nationality as Irish at the time of booking, would it be difficult to change? I'm aware it may depend on the airline but just to get a general idea...

It's normally not required until around 2 weeks before when you can checkin online, nationality won't be asked for either.

although it is usually advised by most airlines and travel companies that you do not make a booking without the required travel documents - this includes passports and visas. Its up to you if you think the risk is worth it. (Although I would say its a fairly low risk)
