We're planning on cycling Rosslare to Dublin (west) later in a few weeks. Does anyone have any suggestions for routes? I was thinking up through the scenic parts of Wicklow might be nice, but I'm not too familiar with the area. Are some of the climbs killers as well?

There's a nice coast road along the R742 and R761 if you don't fancy the Wicklow mountains route.

You dont really have much of an option to stay on the (N25) main road - generally not something I'd recommend - as far as Wexford town, but its got a good hard shoulder, so you should be safe enough.

From there I'd go along the quays, thru the town and over the Slaney up the 'old' road to Gorey. Its mostly very good.

At Gorey you kinda need to decide on an inland or coastal route thru Wicklow. The coastal option will be flatter and shorter, and with care you can avoid all the main roads (you cannot take the motorway in any case!).

    Here's an option for each

Another option would be the coast road to Arklow then woodenbridge, Avoca, rathdrum, laragh glenmacnass and sally gap down into Dublin

If you like the quieter roads, Rosslare - Wexford ring road, turn off at the R730 here and follow it to Kiltealy - Bunclody - Carnew - Aughrim - Rathdrum - Laragh. Once you hit Laragh and the inevitable coffee and bun at the hippy cafe, you can decide on the mountains home (Glenmacnass - Sallygap) or the flatter run (Roundwood - Enniskerry). There's no real climbs involved at all in the latter route, I averaged 26.5kph rolling on it last weekend. You're talking smaller roads and some crappy surfaces in places mind you.

At Bunclody you could also just take the N80/N81 to Tullow - Baltinglass - Blessington, but personally this would bore the socks off me.

I agree coast road to Arklow thru Rathdrum and then suggest Glenealy, Rathnew, Newcastle, Kilcoole, Greystones and West, perhaps via Boghal Road to Enniskerry, Stepaside, Lamb Doyles, Marlay Park. Sally Gap could be challenging toward the end of a day after long ride. Better surface, flatter, much more scenic, quieter not much longer.
Perhaps ride the N11 from Rathnew by way of Ashford (avoiding Newcastle to Greystones) if you don't mind traffic whizzing by.
