Hey I'm back again to do your heads in!
I'm getting better at the scanning malarky, but I'm not sure how to do a scan that can be edited. The ones I have had done were rar files and as far as I can make out I could not make changes to them but now I've been asked to send a scan of a letter that can then be edited. If this can't be done, then no problem, I can type it all out instead.

Most scanners come with some form of OCR software. OCR = Optical Character Recognition. It attempts to convert scanned text into a Word or .txt document. Check your scanner software for this feature. The scan usually has to be in TIFF format for it to work properly but that may not be the case for your scanner.

    Have a look here.

Agree with last post, either before or after scanning, check in 'settings' or options if you have a choice to save scan as 'word' document and choose file format as tiff etc. Don't be afraid to experiment a bit with the settings/options choices.
