I just checked the website and with a BA Joint Honours Arts course here are the subjects your son could take:

It says statistics is not available as a joint honours, but I'm sure he could take it as a minor subject in his first year. I know people who have done the same with psychology for their first year.

Another option is the arts course in NUI Maynooth. In your first year you take three subjects and then drop one, and I think he would be able to choose geography and statistics.
