Where do I go to get a license?
I don't want to sell what i make and i don't want to spend 200-300 euro on a still if i cant use it and the still i saw was a 4 litre on an irish webpage so surely someone can help me.

Distilling without a licence is illegal in Ireland. You will not get a licence to distill at home unfortunately.

A licence for distilling is issued by the revenue commisioners. It is assessed by amount to be distilled, etc. A bond is then paid. Considering some commercial distilleries cant get licences for microdistilleries, I doubt you will get one for home.

They say you need a licence on the website, purely as a disclaimer imho.

I don't know if you can ferment to high ABV's like spirits, but if you wait until tomorrow I'm sure somebody else will know.

In order to make potable spiritous liquors, the distilling process is essential. It is of course possible to drink intoxicants (alcohols / spirits) that have not been distilled but it is not to be recommended on health / survival grounds.
