Spending a long time in South America

    I'm looking at spending a long time in South America (over a year). The plan is still in the process, and to be honest, I might not even do it, I'm just exploring some options here.

    I'll be in California in September and I'd like to head south from there. I was thinking about starting in Venezuela, but I could start further north.

    On the way I'd like to spend some time working in bars and hostels. I have close to five years bar experience and am in my early 20's. I used to be fairly decent at Spanish, but I haven't practised in a while, but I think it'll come back to me quickly enough. I certainly have enough to take food and drink orders. With working in mind, can anyone tell me what countries might be best to go to. Obviously bigger cities for Irish bars, I'd rather do bar than hostel work, or ideally work in a hostel with a good bar. Does anyone know what the odds of getting a work permit are?

    I don't mind making commitments to stay in places for long periods (well around six months) if it means I'm making a wage.

    Sorry for the rambling post, just wondering if anyone can recommend a good route, where I'd likely be able to work along the way. I've been to Argentina before and I'd like to go back there, but that would probably be to chill and see some friends as my journey comes to an end.
