2012 Cooking Club week 21: Low fat chicken Korma

    Hi all, I know low fat and chicken korma arnt normally words you hear together but this is a lighter version then normal, its based on a GoodFood magazine recipe with a few thinks added

    Serves 4

    Ingredients

    1 onion chopped
    1 garlic clover finely chopped
    small thumb sized piece of ginger grated
    4 tbsp korma paste
    400ml chicken stock
    4 chicken breasts chopped
    50 grm ground almonds
    1/4 tsp golden caster sugar
    150g pot natural low fat yogurt
    1tsp veg oil

    Method

    1. finely chop the onion, garlic and ginger, then add the oil to the pan and cook for about 5 mins on till everything is softened

    2. add in the korma paste and cook for another 2 minutes or so ontill the korma paste releases its aromas.

    3. stir the chicken into the sauce and then add the ground almonds, caster sugar and the stock, you may need less then the 400mls it depends on how much sauce you like. simmer for about 10 mins on till the chicken is cooked.

    4. remove the pan from the heat and stir in the yogurt. serve with rice.
