    Hello

    Would anyone be kind enough to let me have a corrned beef recipe (as in how to corn beef). Mant thanks in advance.

    here's one you can try.
    2.25kg (5ld) top side or brisket, ( brisket quite fatty but great taste,)
    beef should be well hung.tie with string
    large stainless steel saucepan
    brine
    6 litres ( 10 1/2 pints)
    800g ( 1ld 12oz) salt
    stir to dissolve
    beef into brine and sprinkle another 110g (4oz) over top
    put a steriliserd plate on top of beef. and a weight on top of plate. (I use scales weight wrapped in freezer bag.)
    you want none of the beef exposed to the air,
    leave in brine for five days,
    then cook as you like it.
